Chocolate Noatmeal (Low-Carb Oatmeal Alternative)
Ingredients:
1 medium head of cauliflower (or 2 ½ cups of cauliflower rice)
1 Tbsp. Brain Octane Oil
1 cup full-fat canned coconut milk (BPA-free)
4 whole eggs, beaten
1 ½ Tbsp. cacao powder
¼ tsp. salt
1-3 tsp. stevia, raw honey, or sweetener of choice to taste
Seasonal berries, mini dark chocolate chips, or unsweetened coconut for garnish (optional)
Directions:
If using whole cauliflower, chop into florets and blend in a blender or food processor until it creates a rice-like consistency.
In a wide saucepan on medium heat, add the coconut milk and bring to a gentle simmer.
Add cauliflower rice and stir until combined. Reduce heat to low and allow cauliflower to thicken for 4 minutes.
Fold beaten eggs into the pan with the choice of cacao powder, salt, and sweetener.
Stir gently once, allow the eggs to cook through, and thicken the mixture. Stir once more before serving in bowls.
Top with seasonal berries, mini dark chocolate chips, and unsweetened coconut, if desired.
